Is it possible to amend the display of grouped roll up lists?
Specifically, can the bottom row indicating the end of a group be hidden
And, can the colour of the rows indicating the start and end of a group be changed?

List Rollup Resulting Data views does not provide the ability to remove the footer row of grouped items, as this is a limitation of SharePoint. I am not aware of the ability to change the color of the header and footer but I can look further and let you know.

If I follow your request correctly, you are seeking the ability to group the List Rollup Data View based on a default column. You can achieve this by modifying the XSLT of the Data View.
